Congratulations Chef Paul Haines!

Chef Haines was nominated and voted Chef of the Year by the Laurel Highlands Chapter of the American Culinary Federation (ACF). The American Culinary Federation, Inc. (ACF), is a professional, organization for chefs and cooks, that was founded in 1929 in New York City by three chefs’ organizations: the Societe Culinaire Philanthropique, the Vatel Club and the Chefs de Cuisine Association of America. They are an organization based on promoting the professional image of American Chefs worldwide through education of culinarians at all levels. They offer culinary competitions, certification, national apprenticeship program, regional and national events, magazines and much more to help foster the growth of professional chefs and the foodservice industry.



Chef Paul Haines, a native of Western Pennsylvania started his career through an apprenticeship at Nemacolin Woodlands Resort in the early 1990’s. After serving locally as the Executive Chef at the Summit Inn and the Executive Chef at the Stone House, Chef Haines found himself back at Nemacolin where he became the Chef de Cuisine of the Tavern. After his second departure from Nemacolin, he went on to become the Chef de Partie of In-Room Dining at the Sea Island Company in Georgia. By gaining new experiences and learning new techniques, Chef Haines returned back to his home here in the Laurel Highlands to take on the position as the Tavern’s Chef de Cuisine at Nemacolin Woodlands Resort as well as the resorts sole ice sculptor. Chef Haines was promoted to Executive Sous Chef of Casual Dining in 2010. Since accepting the position, Chef Haines has had the opportunity to expand the casual dining experience by opening the CaddyShack Restaurant in the Spring of 2010. Chef Haines also over sees The Tavern, Wildside and Hungry Moose Restaurants.
